Apple and Spinach Salad

The ingredients for this salad are: 2 tablespoons each of fresh lime and orange juice, 2 teaspoons each of Dijon mustard and honey, half a cup of freshly chopped red onion, 8 cups (8 ounces) of fresh baby spinach, 1 large cored and thinly sliced apple and a pinch of salt and freshly ground black pepper to taste. Whisk the juices, honey, mustard, salt and pepper together in a small bowl. Then combine everything in the larger bowl and toss it. Extra tip: top with blue cheese.
